Dr Rivene and Jim Montrose held their annual 2921 Intention Setting workshop presenting a new meditation to release the challenges of last year before setting your intentions for 2021. The participants found new inspirations from inside to fuel a more aware, awake, and conscious 2021 no matter what life throw’s us. Jim’s Tabboulleh Vegetarian Salad
This is a lovely Mediterranean and Middle Eastern dish that forms the vegetarian salad part of your typical meze, combination of usually vegetarian appetizers hummus, olives, etc., that combines the cleansing and fresh herb parsley filled with antioxidants and flavonoids with bulgur and tomatoes. I love it loaded with parsley as its predominant ingredient as I experienced in Al Ain and Dubai. Serve cool out of the refrigerator for a lovely cooling summer salad.
Ingredients (for 4-6 people):
1 cup Bulgur wheat soak in enough hot water to cover for a couple of hours and drained
1-2 cups of finely diced fresh parsley (1-2 bunches)
1-2 medium tomatoes diced
1-2 TBS mint
2-3 diced spring onion or ½ small red onion, diced
Optional as you desire
¼-½ cup diced cucumber
¼-½ cup diced celery
A little kale torn into small bits (½ cup or so)
½ cup thinly sliced red cabbage cut into 1 in or 2.cm lengths
2 TBS sunflower or sesame seeds
Dressing: (increase or decrease quantities depending on your taste)
¼ cup Flax Oil
¼ cup fresh squeezed lemon juice
2 TBS Himalayan salt (dissolve in lemon juice before adding to salad) or use Braggs Liguid Aminos (1/4 cup)
Preparation:
Prepare the bulgur with hot water and soak until soft, then drain and place in salad bowl. Add remaining salad ingredients and options and mix. Add the dressing and thoroughly mix and let sit for a hour or more before serving to let flavors mingle and soften the greens. If you want a cooling salad do this in the refrigerator.
Enjoy, serve with homemade humus to fill out the Mediterranean theme
